Keto Italian Meatloaf

Ingredients:
2 pounds of ground beef
1/8 cup of chopped pepperoni
1 egg
1/4 cup almond flour
1/2 of medium onion, minced
8 black olives, minced
8 green olives, minced
1-8 ounce can of tomato sauce
1 tsp dried oregano
1/2 tsp coarse ground pepper
1/2 tsp salt
2 tsp onion powder
1 tsp garlic powder
6 to 8 slices of ham lunchmeat
8 ounces of shredded mozzarella cheese

Preparation:
In a mixing bowl, combine the ground beef, pepperoni, egg, almond flour, olives, tomato sauce and spices. Mix these well and place seasoned meat on a sheet of aluminum foil that is about 15 inches long and has been lightly sprayed with oil. Press the meat into a rectangle 10 by 12 inches. Cover the meat with the ham slices and then sprinkle the mozzarella over that. Lift the edges of the foil along the longest dimension and roll the edges of the meat towards the center and bring them together, if you can. Don't worry if you can't, just seal the seam of foil along the top and at the ends. Place the foil wrapped loaf into a 9x13 pan and bake at 350 F for 75 minutes. Let the loaf rest for 10 minutes after baking and then slice and serve warm.
